#Sizzler: Peanut Ccoconut Salsa-Stuffed Green Chilies


Serve these sizzling stuffed green chillies to veggie dinner party guests, then keep any leftovers for lunch the next day.




6 large Green Chillies

½ cup shredded coconut

¼ cup roasted peanuts

1 teaspoon red chilli powder

1 garlic pod

1 teaspoon dry mango powder

1 teaspoon cumin powder

½ teaspoon turmeric powder

fresh coriander, finely chopped

Salt to taste

1 tablespoon Refined oil




Slit the green chillies and apply salt all over and set aside.

In a grinder, whizz all the above ingredients (except coriander) into a coarse mixture.You can salt to taste adjust the amount as the green chillies are already seasoned.

Add the finely chopped fresh coriander. The peanut coconut salsa is ready.Taste it and you will get hooked on to it.

Stuff the green chillies with the above mixture.

Heat a cast iron skillet, add oil and shallow fry the green chillies on all sides.

Slightly charr each side for 2 minutes for even cooking and taste.
