Summer is one time of the year we all wait for eagerly. The sunshine, the long days, wafting smells of barbecue, sounds of children playing in the garden make you feel alive and one with the universe. On a hot summer day when your inner soul is crying out for something nice and cool but at the same time tasty and stylish, this chilled Prawn Cocktail with avocado and Wasabi Mousse will not let you down and sure to wow your guests.
For the Avocado Wasabi Mousse>>
1 ripe avocado
100 milli litres of cream
1/3 teaspoon Wasabi paste(or according to taste)
1 teaspoon lime juice
Salt and sugar to taste
Peel and chop the avocados. In a blender blend all the above ingredients together and place it in the refrigerator to chill.
For the Prawn Cocktail>>
5 heaped tablespoons of mayonnaise
2 tablespoons cream
3 tablespoons tomato ketchup
1/2 teaspoon lemon juice
Few drops of Tabasco sauce
400 grams prawns (either cooked or raw); If using raw prawns cook them with the shell in boiling water for 5 minutes. Peel and reserve a few (about 4) for decoration.
Mix mayonnaise, cream, ketchup, lemon juice and Tabasco sauce. Add the cooked prawns and mix.
Take four cocktail or martini glasses. Pour some chilled avocado Wasabi mousse in the glass. Pour prawn cocktail on top, Garnish with the reserved prawn and a wedge of lemon. Chill in the refrigerator and take it out just before serving and enjoy this summer cooler, every spoonful a riot of taste…tangy, zingy, creamy and cool.
